Abstract

The attention of dietary fiber has been increasing in recent years. Dietary fiber can regulate blood lipid, blood glucose and intestinal flora, prevent colon cancer and diabetes and plays an active role in promoting human health. The advantages and disadvantages of extraction methods including chemical, fermentation, enzymatic method and multi methods assisted at home and abroad were analyzed. The physicochemical properties of dietary fiber, functional properties and antioxidant capacity were summarized. The physicochemical properties of dietary fiber such as water holding, expansibility, fat and oil holding capacity, the functional properties of dietary fiber including adsorption of glucose, cholesterol, nitrite ion, sodium cholate, cation exchange, adsorption of heavy metals and antioxidant capacity such as DPPH radical and hydroxyl radical scavenging ability were studied,which provided theoretical basis for the development and application in health products and food.
